PEACHES FOR PRESIDENT


Grilled Peaches and Greek Yogurt
Inspired by two recipes in Salad for President by Julia Sherman, and by a ton of perfect farmers market peaches.
The plan was grilled peaches topped with whipped coconut almond cream - inspired by Julia's recipes for Strawberries and Coconut Yogurt + her recipe for Grilled Peach Panzanella with Almond Essence and Purple Basil. Per Julia's advice - I had a can of coconut milk waiting in the fridge to be ready to go, whenever whipped coconut milk became necessary. I followed the instructions for whipping the coconut cream and added a tiny bit of almond oil (because almond + peaches = <3 ) but it was not anywhere close to edible, it was curdled and so so gross (I am positive this is all my own fault - I still love you, Julia). So greek yogurt with honey became plan b. Looking back, I could have added a drop of almond oil to the greek yogurt but it's my roommate's almond oil and I like to be less conspicuous.
Ingredients:
olive oil
sea salt
greek yogurt
honey/vanilla/your fav natural sweetner
almond oil/any other natural flavoring element your roommate has
crumbled almonds or pisatchios and sea salt to top
1. Prepare or grill or cast iron skillet to a high heat.
2. In a large mixing bowl toss sliced peaches with a drizzle of olive oil and a pinch of salt (and pepper if you'd like).
3. Brush the pan/grill with olive oil. Grill the peaches cut side down until caramelized and lightly charred. Flip and repeat for other side. About 3 minutes per side.
4. Mix greek yogurt (I like Fage 2%) with honey and/or almond oil to taste.
5. Serve the grilled peaches with a scoop of the sweetened yogurt. Top with flakey sea salt, or a few crushed red pepper flakes (good on pretty much everything). Chopped pistachios or almonds would also be good. Maybe some basil?
